A café is now offering DIY Vietnamese ‘banh mi’ kits – complete with crusty bread rolls, cured meats, pickled carrots and pâté.

Vietnamese eatery Lit Canteen in Alexandria has launched Sydney’s first DIY banh mi boxes so customers in lockdown can build their own baguettes at home.

Made fresh daily, the $45 kits includes ingredients for four individual serves of banh mi – including pork ham, barbecue pork patties, chicken, pickled carrots and radish, cucumber, shallots, coriander, pâté, soy sauce and chilli mayo.

Each box contains three baguette rolls and a croissant so customers have the option to make an epic banh mi croissant for lunch or dinner.

For vegetarians, customers can create their own rolls filled with panko crumbed mushrooms, tofu, pickled carrots and daikon and vegan mayo, pâté and soy sauce.

Lit Canteen’s co-founder David Phan said the banh mi isn’t a dish you would traditionally make at home because of the specialty ingredients required.

‘The traditional banh mi contains three different types of Vietnamese cured meats, and our Vietnamese mayo and pâté is made fresh on-site from a secret family recipe,’ he said.

‘Even in Vietnam, you would just walk down the road to the local street vendor to get your banh mi fix.

‘The bread rolls are also an important component to get right. To get the bread rolls fluffy and crisp, we get the bread rolls specially mixed by a local baker.’

With most restaurants and cafés offering takeaway or home delivery due to strict coronavirus restrictions, the idea for the banh mi boxes was born.

‘Vietnamese culture is all about coming together to share food with loved ones. Furthermore, it’s the act of putting on a feast to show our love, which is so important,’ co-founder Ly Dan said.

‘You just have to look at pho which requires one day’s labour – or two days in our case – but is a staple in bringing many families together.

‘With all of us missing out on that luxury right now, we wanted a way for our friends and family to still experience communal eating during lockdown.’

Pre-ordered banh mi boxes are available for pick up during the week with one day’s notice, while delivery is available across Sydney on Saturday’s for an additional fee.

The fee will vary according to where you live from the Alexandria store – $10 for suburbs within a 7km radius, $15 for 15km radius, $20 for 20km, or $30 for 25km.
